Uber pricing comes dining
Uber-style dining is on the menu. Nick Kokonas, co-founder of Chicago restaurants Next and Alinea, thinks eateries should introduce surge pricing like that offered by Uber and Lyft. The prices of meals would spike and fall based on demand, he told Bloomberg’s The Year Ahead event.
Kokonas likes tech solutions to culinary problems. A few years go he launched the Tock online reservation platform that requires diners to slap down an advance deposit to hold a table. The basic Tock idea is to cut down on restaurant no-shows and it is now in use in more than 100 eating establishments in over 20 markets.
